Mini Ice Cream Sandwiches

It's finally warm here in Seattle - actually, a little too warm for me. I'm thankful for the air conditioning. But the kids are outside braving the heat so I thought I'd make them a nice cool treat for when they come in. These little mini ice cream sandwiches are perfect as they are easy and quick to make and super yummy!

Here's a tutorial, but I'm sure you can figure this out on your own...

Ingredients:

Ice Cream
Mini Cookies (I get mine from Trader Joes - we are using Swiss Almond Crunch)

Step 1: - Soften the ice cream slightly so that it is easier to scoop. I used a melon ball scooper as it made the perfect size scoop for the mini cookie.
Step 2: Scoop one small scoop of ice cream on to one the back on one cookie.

Step 3: Smash another cookie on top until the cookie spreads to the edges of the cookie.



Step 4: Place them in the freezer until they set slightly - or, eat them as you make them. Your choice!

I LOVE IT! Think I will use it for a Fourth of July bash I am having. The kiddos will love it!

My Mom used to make ice cream sandwiches for us when I was little. YUM! Mini ones would be perfect for my little gal.
