Muffin Tin Monday - for dinner

Okay, we had a really busy day on Monday and we weren't near home for lunch time... so I had to delay our muffin tin meal until dinner. The kids didn't seem to mind... and I had an extra little surprise for them. I found these fun little muffin cups at Walmart, the other day, on clearance. I figure they are perfect for adding one or two extra muffin spaces to their normal 6 muffin tin.

They distracted Lyssie a bit - although it's hard to tell if it was the muffin cups or if it was because it was dinner time (she isn't the biggest dinner eater). At any rate, Robbie was very enthusiastic and ate pretty well.

Muffin cups included Edamame, watermelon, string cheese, rice formed with cool Japanese molds, grilled vegetables, grilled chicken, ham and mashed potatoes!
